Baking


On this page you will find recipes for baking using herbs. In some cases the recipe will call for fresh herbs. If, however you don't have any or it is the wrong time of year for the fresh herb, you can substitute dried. Just remember that if using the dried herb you should halve the quantity.

Lavender Shortbread

(My Mum’s recipe)





Ingredients
9oz (255 g) plain flour
3oz (85 g) cornflour (cornstarch)
3oz (85 g) caster sugar
8oz (225 g) butter
1 tbsp dried lavender flowers
demerara sugar

Cream the butter and sugar together then add flour and lavender flowers.
Work into a smooth thick sausage shape and roll in demerara sugar.
refrigerate for 30 minutes.
cut into rounds and bake on a greased tray for 12 - 14 minutes at 350 f (180 c)



This shortbread recipe came from my Mum. The addition of lavender is my own variation. I also vary it by adding either dark, good quality chocolate chips or chopped crystallised ginger. They are all good - give them a try!
