Desserts
On this page you will find recipes for desserts using herbs. In some cases the recipe will call for fresh herbs. If, however you don't have any or it is the wrong time of year for the fresh herb, you can substitute dried. Just remember that if using the dried herb you should halve the quantity.
Chocolate and Rosemary Desserts
Ingredients
200g good quality dark chocolate, broken into pieces
4 tbsp vanilla* sugar
4 tbsp elderflower cordial (diluted to taste with water)
2 tsp chopped fresh rosemary
200g fromage frais
200g creme fraiche
Method
Melt the chocolate in a bowl over a pan of simmering water, stirring occasionally until the chocolate has melted.
Put the vanilla sugar, rosemary and the four tablespoons of elderflower cordial in a separate pan. Heat gently, stirring until the sugar dissolves. Remove from the heat and leave to cool. Strain to remove the rosemary once cooled.
Place the fromage frais and crème fraiche in a food processor or mixer. Switch on and slowly add the melted chocolate, then the rosemary syrup. Mix until well-blended.
Spoon the chocolate mixture into small dishes or glasses, cover and chill until ready to serve.
* I keep a vanilla pod in my caster sugar container so that I have vanilla sugar available whenever I need it. |
