| Lime and Ginger Duck serves 2 1 small onion 1 garlic clove, crushed 1 inch piece ginger, finely chopped 1 teaspoon chicken bouillon 1 lime 1 tablespoon runny honey 1/2 pint dry white wine salt & pepper 2 duck breasts Sauce Peel onion. Leave whole and put into pan with white wine. Add garlic, ginger, stock and lime rind and bring to boil. Simmer for 20 minutes. Add honey, lime juice and season to taste. Prepare the duck Score the skin a few times with a sharp knife. Season well. Heat a frying pan with a little olive oil. When hot, sear the duck, skin side down, until golden brown. Remove from the heat and put the duck breasts into a baking tin. Cook in a hot oven four minutes for rare, seven minutes for medium, or ten minutes for well done. Remove the duck from the oven to rest for ten minutes. Slice duck breasts and place on a plates. Pour sauce over and serve with vegetables of your choice. |
