Vegetable Dishes


On this page you will find recipes for vegetable dishes using herbs. In some cases the recipe will call for fresh herbs. If, however you don't have any or it is the wrong time of year for the fresh herb, you can substitute dried. Just remember that if using the dried herb you should halve the quantity.

Herb mash
serves 4
600g potatoes
300g sweet potatoes
1 garlic clove, crushed
sprig rosemary
small bunch chives
8 small sorrel leaves
8 large basil leaves
knob of butter
1 tsp extra virgin olive oil


Peel and boil potatoes until tender. Mash together with the butter and oil.  Crush the garlic and add to the finely chopped herbs. Add herbs to potatoes and mix well.
